Mix 1/2 cup oats and 1/2 cup milk, with a pinch of salt and a pinch of ground cinnamon and ground ginger. Add 1/4 grated carrot and 1/2 grated apple, 1 tsp chia seeds and some honey to taste. Let it soak for a couple of hours or overnight. Before serving, add ¼ cup full cream yoghurt and mix well. Add 1 tsp pumpkin seeds, 1 tsp sunflower seeds and some chopped walnuts.
In a separate bowl, mix 1 TBS cream cheese and 1 tsp honey with a whisk. Mix well until smooth and fluffy. Top overnight oats with this cream cheese, a sprinkling of toasted seeds and nuts and a final dusting of cinnamon.
