- 2 red peppers
- 1/2 tsp garlic
- 1/2 cup apple cider vinegar
- 1/4 cup olive oil
- 2 tsp honey
- 1/2 tsp salt
Place red peppers over open flame (coal or gas) and let it char. Once charred, place in oven with a bit of olive oil and let it roast for 10mins. Once it is done, place in a bowl and cover with cling. Let it soften. When soft, chop up into chunks, discarding the seeds.
Blitz together with remaining ingredients. Adjust salt and honey to your preference. Enjoy over salads, fish, pasta or use as a paste on wraps and sandwiches.
